SAMM- Japanese Style Curry

I was lucky enough to marry a man who make the best Japanese Curry EVER!  It’s so YUMMY and EASY you should try it.  As always I’m linkin’ it up here. 033

First you’ll need to find these.  Curry Sauce Mix, they are sold in the Asian section of most supermarkets.  They usually come in three degrees of heat, mild, medium hot or hot.  We usually like to mix a medium hot and a mild together.  We make 2 boxes of Curry for our family of 7.  (6 of which are currently curry eaters) I suggest you do the same because this curry is one of those things that gets better with age it’s always so good as leftovers.

Then you decide what you want to go in your curry, we always do the same things.  Carrots, potatoes, onions and chicken. You however can add whatever you would like.  ( If you are now looking at the pictures and are a little concerned I just wanted to let you know, YOU DO NOT NEED THAT MANY CARROTS, POTATOES, ONIONS OR CHICKEN.  We were making a mega batch so my hubby could bring some to work for his Thanksgiving holiday lunch) What you really need is enough veggies and meat to fill up 5 cups of water, (that’s for two boxes of curry sauce.)

After you have all of your veggies peeled and diced, cube your chicken and cook it up in a skillet with your onions and a little bit of oil.

While that’s cooking bring your vegetables to a boil in a large pot.  When the vegetables are just tender and your chicken is completely cooked add the chicken and onions to your veggies.

Then you add your curry.  It comes in these little blocks that you just drop into the water

As it dissolves it makes this really lovely curry gravy.

Then you serve it over, or next too some rice.  I would recommend a Japanese style short grain sticky rice, but really you could serve it on whatever rice you have.  Try it I know you’ll love it!

SAMM Homemade Pizza

One of our family favorites is homemade pizza and that’s my SAMM recipe for today.

042

First you’ll need some dough here is a great recipe for Pizza Dough.

008012

Sometimes we make 2 pizzas and sometimes we make one pizza and one garlic cheesy bread.  Today we went with one pizza and one cheesy bread.

Get your pizza dough spread evenly over your pizza pans.

015027

For garlic cheesy bread I spread the dough with butter and then sprinkle it with garlic powder, pizza seasoning or Italian seasoning, parmesan cheese, and then top it all off with some mozzarella cheese.

032033

When that’s all done I use my pizza cutter to cut them into bread sticks.  Then I bake it for 15 –20 minutes at 425 degrees.

034

For the pizza take your dough and spread it with your favorite pizza sauce.  Since we make pizza so often I like to make and can my own.

035

Gather your favorite toppings.  Today we went with pepperoni, olives, artichoke hearts,  1/2 pepperoncini's and of course mozzarella cheese.  Bake at 425 degrees for 18-20 minutes.

ENJOY!!

VARIATION

One of our favorite homemade pizza’s is made with a garlic parmesan white sauce and then you add chopped cooked chicken, crumbled bacon, green onions, sliced zucchini, artichoke hearts, and diced tomatoes. (sometimes we use spinach and olives too) IT IS SO GOOD  you should try it!

SAMM - Easy Beef Stroganoff

My SAMM recipe for today.  I got this recipe from one of my many awesome sister-in-laws Brittany.

064

You’ll need

1 lb of hamburger (in my house our hamburger comes in the shape of a turkey)

1/2 cup of chopped onion

1 can of cream of chicken soup

1 can of cream of mushroom soup

1 cup of sour cream

salt, pepper and garlic powder

16 oz egg noodles or rice.

Cook your hamburger and onions until the hamburger is done. Then add your two cans of soup.   Add salt, pepper, and garlic powder to taste.  Simmer until hot.  Then stir in the sour cream.  Serve over cooked noodles or rice.

This recipe is very versatile and can be used with whatever meat you have on hand and you can switch up the soups to some of your favorite cream of whatever soup.

Today I’ll be serving it with one of these beauties and some veggies. 055

Butternut Squash Soup

 bsoup
It’s fall and fall to me means soup.  So I wanted to make a butternut squash soup but I really couldn’t find a recipe that looked good so I just threw this one together and I think it turned out wonderful.  I'm linkin it up here to SAMM.  It's a great way to get new ideas for dinner.

1 butternut squash peeled and cubed
2 potatoes peeled and cubed
2 carrots peeled and sliced
1 onion peeled and sliced
4 cups of vegetable stock
water, milk,  cream or more stock
2-3 TBS butter/ olive oil
garlic to taste
salt and pepper to taste
parmesan cheese
Your favorite spice blend (sorry it’s not super specific but use what you like)

The directions get a little tricky.  I was in a hurry so I just boiled all my vegetables including the onion until soft and pureed it with my hand blender thingy.  And it turned out great.  BUT this is how I would have done it if I had more time.
Sauté the onion and garlic in the butter or olive oil until transparent.  Then add the squash, potatoes, carrots, onion and the vegetable stock.  When all the vegetables are soft puree it with my hand blender thingy.  Then add the water, milk, cream, stock (whatever) until it’s the consistency that you want.  Then add spices to taste.  I also added some parmesan cheese and part of a packet of a Knorr spice blend. * NOTE* I really thought that this soup was great how it was BUT if only my husband and I were eating it I would have liked to spice it up a bit maybe with some green chilies or jalapenos.  ALSO if you have a Costco that sells the artichoke jalapeno parmesan dip that would be really yummy mixed into this soup.  Happy eating!
